Manhattan Clam Chowder
(tomato-based)

Vegetables used in this recipe
Carrots, Celery, Garlic, Onions, Peppers, Potato, Tomatoes

6 cups cold water

1 – 956mL bottle Clamato Juice
(can use spicy if you want
a little more zip to your soup)

2 – 10oz cans clams, including juice
(can also use fresh or frozen clams
to equal amount of 2 cans)

3 – 4 fresh tomatoes, diced
(or 1 large can diced tomatoes)

1 large onion, chopped

3 stalks of celery, chopped

1 green pepper, finely chopped

2 – 3 carrots, cubed
2 large potatoes, diced
1 clove garlic, minced
Salt & pepper, to taste
Tabasco sauce, to taste

DIRECTIONS:


Combine all ingredients – except for clams - in large pot. Bring to boil and simmer for about 20 minutes, until veggies are tender.

Add clams and simmer just until clams are heated – about 2 minutes.
