10 cups chicken or vegetable broth*
2 cloves of garlic, minced
1 large onion, chopped
2 potatoes, finely cubed
2 leeks, thinly sliced
(white and pale green parts only)
Salt & pepper, to taste
1 ½ cups cream
2 tbsp butter
(do not substitute margarine!)

DIRECTIONS:
Put all the ingredients in pot except for cream and butter.
Bring to a boil and simmer for 45 minutes.
Add cream and butter; simmer for another 5 minutes.
You may have to add more salt & pepper at this point, so adjust accordingly.
